Shortbread is one of my favorite types of cookies to make (and eat) and requires only three ingredients: flour, sugar, and-most importantly-butter. It’s a quick and easy cookie for a buttery and delicious treat. The recipe I use is very simple: cream butter, add in sugar, add in flour, and then assemble in a square pan (sometimes I make a half batch and use a loaf pan with half quantities of everything in the recipe and only bake for about 25 minutes or until slightly browned).

The most important thing about shortbread is, don’t pre-cut your cookies! If you cut and then bake, they will melt because of the high butter content (I definitely don’t know this from experience). Instead, bake in a square or loaf pan and then use cookie cutters or a knife to cut while still warm (I wear an oven mitt to protect my hand while cutting with a cookie cutter into still hot from the oven cookies). Then let cool (I leave the cookie cutters in while cooling) and viola! Yummy shortbread in cute shapes! Pears well with jam or delicious on their own (I’m serving my shortbread with pear butter).
