Unicorn Macarons

I had a ton of fun making these colorful, delicious unicorns. For my birthday earlier this year, I received this fun macaron mix as a gift. I had never made macarons before and was excited for any help I could get for my first attempt. For the aesthetics, I used Nerdy Mamma’s Easy Unicorn Macarons as my model for making my unicorns. Overall, I’m super happy with how the unicorns turned out both visually and in flavor.

I put a ton of love into these unicorns as they were a special birthday treat for a friend. I started by mixing the macaron mix with warm water using a hand mixer and then piping the macarons on parchment paper. I drew approximately one inch diameter circles on the parchment paper and gave some of them ears and a horn for the unicorn head. I make a makeshift piping bag using a ziploc plastic baggie, a piping tip, and electrical tape to keep it sealed. After piping the macarons I banged the metal tray they were on many times (about 20) repeatedly to settle them (I had read this was a really important step for macarons so I tried to take care to follow it).

After letting the macarons sit for 15 min (another important step), I allowed them to bake for 15 minutes and then allowed them to cool fully. I then mixed up the buttercream frosting by adding butter to the provided powder mix and mixing with a hand mixer. I added about a teaspoon of vanilla to make a vanilla buttercream. I then split the buttercream into three bowls and added either red, blue, or both food coloring to making the fanciful pink, blue, and purple pastels for the unicorns mane. I used various piping bags to make the mane/flower crown. I decorated the horn using white gel icing mixed with yellow dye and painted it on with a small food paint brush. Similarly, for the cheeks I used white gel icing mixed with red food coloring. For the pearls in the flower crown I used white and blue pearl sprinkles. Finally, I used blue gel icing to make the cute closed eyes and eyelashes. And voila! Adorable unicorn macarons. I piped a purple/pink/blue swirl buttercream in the center between the two cookies to complete the macarons.

This was a great introduction to macarons for me and I would definitely try other designs and flavors with or without a mix in the future!
