Llama Pineapple Tarts

I made this Lunar New Year recipe a little late this year: homemade pineapple tarts! I got this recipe from Tasty and added my own twist: an adorable llama design! I used an adorable llama cookie cutter I acquired on a trip to Ferndale, CA. The I used a pineapple center to make a basket/blanket for the llama and butterscotch chips to make the llamas’ eyes. Overall this cookie creation is delicious: buttery, flaky, with just the perfect balance of sweetness. Full recipe below.

Llama Pineapple Tarts Recipe

Ingredients for the jam:

  • 3 20-oz of canned pineapple
  • 250g Sugar
  • 1 cinnamon stick (you can use a different spice)

Instructions for the jam:

  1. Sift the canned pineapple and put them into a food processor, mix them until its smooth.
  2. Cook the smooth pineapple with the sugar and cinnamon stick for 30 minutes, until it seems dry.
  3. Lastly, sift the pineapple again for about 20 minutes.

Ingredients for the cookie dough:

  • 500g flour
  • 1 tsp of baking powder
  • 375g of unsalted butter
  • 80g of powderd sugar
  • 6 egg yolks
  • 1 tsp of vanilla
  • a little bit of butter

Instructions for the cookie dough:

  1. Preheat oven to 350°F.
  2. Sift the flour and baking powder.
  3. Cream in a different bowl the butter and sugar. When your butter and sugar is nice and fluffy add slowly one yolk at the time. Afterwards add the tsp of vanilla.
  4. Put the dry ingredients into the wet ingredients and fold it until you have a nice smooth dough.
  5. Rest the dough for an hour.
  6. Combine both: Roll out the dough with flour until ur favorite thickness.
  7. Cut our the cookies with a llama-shaped cookie cutter and put cookies on a greased baking sheet.
  8. Make a small ball with the jam and place it ion the upper back of the llama, as if the llama has a blanket on its back.
  9. Take the rest of the dough and roll it out again. Cut small strips out of the remaining dough. Place 2 cookie strips on every pineapple jam ball.
  10. Melt a little bit butter and spread it over the cookie.
  11. Finally, use a butterscotch chip for each llama eye.
  12. Place your cookies in you pre-heated oven (350°F/180°C) for 15 minutes.
